  • Description of the vineyards: The soil composition is a clay loam originated by the geological formation called “Marl of Vicchio (marl and clay marl);
  • Altitude: 500 metres;
  • Exposure: south, south-west;
  • Pruning tecnique: unilateral cordon;
  • Planting years: 1999;
  • Plants density: 7000 plants per hectare;
  • Rootsocks: 420 A;
  • Clones: Sangiovese Tin 10, Tin 50; Merlot 181;
  • Grape varieties: 50% Sangiovese, 50% Merlot;
  • Vinification tecnique: The vine-harvest (completely done by hand) usually starts after the first week of Semptember for Sangiovese and a few days before for Merlot. We put the grapes in small boxes each one containing about 15 kg of grapes. We bring the boxes to a terrace situated on the cellar where there is the destemmer, a particular machine, that at first divides the grapes from the grape-stalk and immediately after it presses them. The must enters directly by gravity in the cellar’s concrete and woody containers (capacity 20 hectoliters) through some openings of the terrace. In these containers takes place the fermentation. The liquid part and the skins are in contact about 10 days, then they are divided;
  • Refining technique: after the fermentation the wine is transferred into the barriques where the malolactic fermentation takes place. This kind of barrels are made by french with a capacity of 225 litres. The wine lies in the barriques for 10 - 14 months;
  • Mains analytical datas: Alcohol: 13,00% - 13,50% — Total acidity: 5,10 - 5,40 gr/ litre — Total dry extract: 28,00 - 30,00 gr/litre.

Our agricultural firm has followed since 1998 a completely organic production, for both grapes and olives.

We currently produce about 35-40.000 bottles annually, about 70% of these are exported to the United States, Japan, Sweden, Mexico, Canada and other European countries.
